At Belly of the Beast, our mission is to honor our Mexican-American roots through thoughtful, chef-driven cuisine shaped by family, culture, and community.
Every dish is created with intention — inspired by heritage, guided by seasonality, and rooted in respect for the ingredients and the people behind them. We are committed to supporting local farmers, makers, and vendors while creating a warm, welcoming space where guests feel connected, cared for, and part of our story.

Supporting our community
Beyond our doors, we actively engage with local organizations and initiatives to contribute to a stronger, more connected community. Belly of the Beast is more than a restaurant — it’s a reflection of the heart and soul of the people we serve. Together, we nourish our bodies, nurture our relationships, and cultivate a shared sense of belonging.
We support local events and provide mentorship to high school and college students interested in the hospitality industry and the arts.
Sustainability
Sustainability is woven into the way we cook, source, and serve our community. As a small, chef-driven restaurant in Spring, Texas, we intentionally operate with a limited footprint, allowing us to focus on thoughtful sourcing, reduced waste, and meaningful relationships with local farmers, ranchers, fishers, and artisans whenever possible.
Our menus are seasonal by design, changing frequently to highlight ingredients at their peak and minimize excess product waste. We utilize whole ingredients across multiple dishes, preserving, pickling, fermenting, and repurposing trim in sauces, stocks, oils, and garnishes to reduce unnecessary waste in the kitchen.
We also prioritize partnerships with small producers and independent purveyors who share our values around responsible agriculture, ethical sourcing, and environmental stewardship. Many of our dishes are inspired by traditions rooted in respect for ingredients and resourcefulness—values deeply connected to both Mexican cuisine and global culinary practices.
Beyond the plate, we believe sustainability also means investing in people and community. Through collaborations, charitable events, and participation in initiatives supporting local food systems and hunger relief efforts, we strive to create impact beyond our dining room.
As a small independent restaurant, every decision matters. Our goal is not only to create memorable food and hospitality experiences, but to do so with intention, care, and long-term respect for the people, producers, and environment that make our work possible.
